Pavilions have been around since ancient times; in the far east, they might be called pagodas, which are religious towers with characteristically sweeping rooflines. The word “pavilion” derives from the French word “pavillon” and the Latin word “pavilio.” 

Throughout the history of the United States, even since the early days, pavilions have both been a specific kind of outdoor shade structure and an overarching term for various ones. They could be temporary or permanent, and they could resemble tents or ancient Greek and Roman temples. Other names for pavilions in 18th and 19th century America are “summer houses” and “temples.” The idea that pavilions were like small, ornamental temples could come from similar European structures and Greek Revival architecture.
